Looks like I'm late to the party - BUT here's some additional info on putting an LSx into a jet boat (I have done two so far).
Exhaust - the link Blaze has is good, but at nearly $900 - you can get Rewarder water injection headers for the LSx for about the same price - you're choice of through transom, over transom, or Mercury style (whatever that means). Also - Lightning Mfg does water jacketed headers for the LSx - but I have not priced those.
Tuning - If you're going EFI and you're anywhere near Victoria, Tx...you simply need to hook up with PatG (Patrick Guerra). One of the best tuners nationwide.
Rear motor mount - If you are already running a BBC, then do you don't need to change anything. LSx and BBC/SBC have the same bolt pattern, except the LSx leaves 1 bolt out. I have switched from an S&W Race Cars rear plate to a Lightning Mfg rear plate with a top mount starter. LSx engines have a 168 tooth flywheel also, so it's the same starter as a BBC.
Front motor mount - If you want, just use an S&W Race Cars front motor plate kit (it's two pieces). The only downside is that it bolts where the water pump (or remote adapters) bolt...so a water pump change won't be as easy.
PTO - I am using a Glenwood marine PTO adapter. They have 1310 and 1350 versions. They originally had them incorrectly marked as being for the LTx series of motors, but after several hours on the phone with them going over measurements with Bob (I think), we figured out the problem. They can be purchased at a VERY reasonable price WITH bolts by calling Glenwood directly.
Fuel System - don't forget that if you are converting to EFI you will likely need two things you don't already have. One is a high pressure fuel pump, and the other is a return line. If you have a single tank, this is easy...if you are like me and have dual tanks it could create an issue. My solution was to use the fuel pump I already had for the carb as a transfer pump. Basically I can fill the left tank from the right tank; but the motor only feeds/returns to the left tank. Sort of like having a big gas can on board. Yes - the $500 Imco fuel switch would be the way to go; or manual fuel valves...but this was super easy.
Cooling system - Moroso has remote water pump fittings now that will make using lake water a breeze. Just remember, though - an aluminum block LSx needs to be at 150*+ to run correctly. Otherwise nothing expands correctly and you lose power from not having enough heat in the heads. Seriously. I have a closed system...but to each their own. An iron block shouldn't be as tough to keep warm. LSx engines also have steam vents at the top of heads - take advantage of these, they will get the air out of the system and prevent hot spots in the heads.
